Lotus of Siam opened in a Sahara Avenue strip mall in 1999 and became, improbably, one of the most acclaimed Thai restaurants in the country. Chef Saipin Chutima's northern-Thai cooking — nam prik ong, khao soi, crispy rice, and a deep German Riesling list — drew national critics to an unassuming Las Vegas room.
James Beard recognition and a devoted following turned the original into an institution; Lotus proved that some of the best food in Vegas is found far from the Strip's marquee names.
