Pete's Kitchen has kept its griddle hot 24 hours a day on East Colfax since 1942, a neon-signed Greek diner where the late-night crowd files in for gyros, souvlaki and the legendary breakfast burrito smothered in green chile. Founder Pete Contos became a Colfax institution, and the counter still runs around the clock.
