Wool Growers is Bakersfield's most beloved Basque restaurant, opened in 1954 by Mayie and J.B. Maitia to feed the region's Basque sheepherders and still run by the same family. Dinner is a marathon of family-style courses — soup, beans, salsa, salad, pasta, and fries — before the lamb, oxtail, or pickled tongue even arrives.
The white-tablecloth dining room and its adjoining cocktail lounge remain a communal, generous experience: you sit down hungry and leave having eaten your way through a full Basque table.
